Yacon fruit powder is produced from the storage root of yacon (Smallanthus sonchifolius), a tuberous plant of the Asteraceae family grown in the Andean highlands and, more recently, in Yunnan and other temperate regions of China. Despite the common trade name, the material is a root powder rather than a fruit powder.

Composition
Yacon's distinguishing feature is its carbohydrate profile. Most root crops store starch; yacon stores fructooligosaccharides (FOS) and inulin-type fructans instead, which is why the root tastes sweet while supplying only a small fraction of its weight as digestible sugar. The root also contains potassium, a polyphenol fraction that includes chlorogenic acid, and dietary fibre. Because the fructan fraction is also the fraction that can be lost or degraded during processing - fructans are hydrolysed by heat and acid - the fructooligosaccharide content, and the enzyme status of the raw material, are the specification items that matter most. Yacon material must be handled with care: prolonged high-temperature drying degrades the very fraction the ingredient is bought for.
Applications
Yacon root powder is used in solid drinks and instant beverage powders, in baked goods and snack applications, in dairy and plant-based products as a naturally sweet fibre source, and as a raw material in dietary supplement sachets and tablets. It is supplied for further manufacturing rather than for direct consumer use, and any nutrient or content claim on a finished product must comply with the regulations of the destination market.
