Product Description
Lemon fruit powder is produced from the fruit of Citrus limon (L.) Burm. f. by juicing, drying and milling. The powder carries the fruit's citric acid content, its vitamin C content and its characteristic aroma, which is the basis on which the material is normally specified. Because the peel is included, the powder also carries the peel's flavonoid and terpene content.

Composition
- Organic acids – citric acid is the dominant acid in lemon, with smaller amounts of malic and ascorbic acid.
- Vitamin C – a natural constituent of the fruit; the retained level depends on the drying route.
- Flavonoids – hesperidin and eriocitrin class compounds carried over from the peel.
- Volatile oil – limonene and related terpenes, which give the powder its citrus aroma.
