Broccoli extract powder is produced from Brassica oleracea by hot-water extraction, solid-liquid separation, concentration and spray drying. The material is standardised on glucoraphanin, the glucosinolate that converts to sulforaphane when plant tissue is disrupted, and is supplied for food, beverage and supplement applications.
Glucoraphanin in Broccoli
Glucoraphanin is present throughout the plant but is concentrated in the seed, where content can be an order of magnitude higher than in the mature vegetable. That is why broccoli seed is the usual starting material for standardised extracts. On tissue disruption, glucoraphanin meets the enzyme myrosinase and is converted to sulforaphane; the main degradation products are sulforaphane, sulforaphane nitrile, goitrin and iberin.

Applications
Standardised broccoli extract is used in capsule and tablet formats, powdered drink mixes, tea and coffee products, and baked goods where a broccoli-derived ingredient is added for its glucoraphanin content. Glucoraphanin from broccoli seed is recognised as GRAS in the United States, and finished products containing it are sold in North America and Southeast Asia. Formulators should confirm the status of the specific grade in the destination market before launch.
