Composition
Pomegranate has an unusual polyphenol profile. The dominant compounds are the ellagitannins - punicalagin A and B are the best known - and these occur mainly in the rind rather than the juice. The arils contribute anthocyanins, which supply the red colour, together with vitamin C, potassium and citric and malic acids. Because the tannins sit in the rind, a whole-fruit powder carries a noticeably higher tannin load, and therefore more astringency, than a juice-derived powder. That distinction is the first thing to settle when specifying the product: whole fruit or aril-derived, and whether the rind is included.
Tannin content and mouthfeel
The tannin fraction binds to proteins and polysaccharides, which is why pomegranate material reads as astringent and drying on the palate. In practice this is managed by use level and by pairing: tannins are tempered by dairy proteins, by sugars, and by other fruit solids. It also means the powder behaves differently in a beverage than in a filled product, so a bench trial at the target inclusion rate is worth running before a formula is locked.
Applications
Pomegranate fruit powder is used in powdered and instant beverages, juice blends, dairy and plant-based drinks, ice cream and desserts, bakery and confectionery, and as a natural colour and flavour source; it is also used in dietary supplement capsules and sachets, and in cosmetic preparations. It is supplied for further manufacturing rather than for direct consumer use.
