PRODUCT DESCRIPTION
Red beet root powder is produced from the root of the beetroot plant and milled to a fine powder. The root is naturally rich in folate and manganese and contains betaine (trimethylglycine), a methyl-group donor, together with dietary fibre, vitamin C and a mineral fraction.
Beetroot powder and betanin are two different products. The pigment fraction of the root is a betalain - principally betanin, accompanied by vulgaxanthin - and it is betanin, not betaine, that gives the root its deep red colour. Betanin is water-soluble, comparatively stable in the mildly acidic to neutral range, and unstable under prolonged heat. Where colour is the reason for using the ingredient, a betanin-standardised grade is the right specification rather than a whole-root powder; where the whole-vegetable composition is wanted, the powder is the appropriate choice.

Beetroot powder is used as a natural colourant, acidulant and flavour contributor in:

Formulation notes
Beyond colour, the powder functions as a food additive that increases consistency, retains moisture and modifies texture and taste. It blends readily into liquid and semi-liquid systems:
- Fruit sauces. A spoonful turns apple sauce pink and adds flavour and colour at the same time.
- Batters and baked goods. Added to pancake, waffle, cake or cupcake mixes, it carries colour through the bake.
- Dressings. It mixes into sweet dressings and can be sprinkled directly over fruit and vegetables.
Heat load is the practical limit: prolonged processing degrades the betalain colour, so where the process allows, colour-critical additions are made late.
SOURCING NOTES
When selecting a grade, the parameters worth settling before the quotation are the betanin content or colour value, the moisture limit and the particle size, since these determine both colour yield and dispersion behaviour. A grade optimised for colour will not carry the highest whole-root nutrient content, so the priority should be decided before the specification is fixed.
