Mulberry powder is produced from the mature fruit of mulberry (Morus spp.) by juicing, drying and milling. The powder carries the fruit's anthocyanin and carotenoid pigments together with its protein, amino acid and mineral content, and it is used mainly for colour and for its fruit character rather than as a sweetener.
