Composition
Cherry is one of the higher-iron fruits, and it also carries vitamin C and a potassium fraction. Its distinguishing constituents are the anthocyanins - principally cyanidin glycosides - which supply the deep red colour and are the reason cherry products are specified on anthocyanin or colour value. The fruit also contains melatonin and a small polyphenol fraction including chlorogenic acid.
Whole fruit compared with juice concentrate
A whole-fruit powder retains the skin, the fibre and the full anthocyanin load, and it brings colour as well as flavour to the finished product. A clarified juice concentrate delivers the acids and sugars without the fibre. Which one is correct depends on the label: a product declaring fibre needs the whole-fruit powder, while a clear beverage needs the clarified form. The specification sheet should state which one is being quoted.
Applications
Cherry extract powder is used in powdered and instant beverages, juice and dairy blends, ice cream and desserts, bakery and confectionery, and as a natural colour source; it is also used in dietary supplement capsules, tablets and gummies, and in cosmetic preparations. It is supplied for further manufacturing rather than for direct consumer use.
