PRODUCT DESCRIPTION
Apple fruit powder is produced from ripe fresh apples (Malus pumila Mill.) by juicing, drying and milling. The powder is a free-flowing, off-white to light cream solid that carries the fruit's sugars, organic acids and aroma, and it is used both as a fruit ingredient and as a flavour and body contributor in dry and liquid systems.

COMPOSITION
Apple fruit powder contains dietary fibre and a mineral fraction, together with a range of amino acids carried over from the fruit. The soluble iron and phosphorus content is a characteristic of the whole-fruit material, and the powder is readily dispersible, which is what makes it usable in both dry blends and reconstituted liquid applications. As with all fruit-derived powders, the vitamin fraction and the aroma volatiles are heat-sensitive, so the thermal load of the process should be settled before the grade is fixed.
