Black plum fruit powder is produced from the dried, nearly mature fruit of the Japanese apricot (Prunus mume), the fruit known in Chinese as wumei. The fruit is dried and milled into a fine powder for food and beverage applications.

Composition
The fruit is characterised by a high organic acid content, dominated by citric acid and malic acid, which is what gives the powder its sharp, sour profile. It also carries a polyphenol fraction and dietary fibre, and is a source of potassium and calcium. Because the acid profile drives both the taste and the preservative behaviour of the finished product, the titratable acidity is normally specified alongside the extract ratio.
Applications
Black plum fruit powder is used as a natural acidulant and flavour ingredient in beverages, drink powders and fruit tea blends; in confectionery, jam and preserve applications; as a raw material in dietary supplement tablets and sachets; and in functional food formulations where a sour fruit note is required. It is supplied for further manufacturing rather than for direct consumer use.
