Composition
Kiwi fruit is one of the more vitamin C dense fruits, and the powder retains that vitamin content together with dietary fibre, potassium and the flavonoid luteolin. The organic acid profile, dominated by citric and quinic acid, gives the powder its characteristic tartness and makes it useful where an acidulant and a fruit note are both wanted.
Applications
Kiwi fruit extract powder is used in powdered beverage and smoothie blends, nutritional and sports nutrition formulations, functional food and confectionery, and dietary supplement capsules and sachets. As with any hygroscopic fruit powder, it should be stored sealed and away from direct light.
