PRODUCT DESCRIPTION
Broccoli (Brassica oleracea L.) is a member of the cabbage family and closely related to cauliflower; its cultivation originated in Italy, where its name means "cabbage sprout". The plant supplies the raw material for a group of related ingredients rather than a single one.
Broccoli contains glucosinolates, a class of sulphur-containing secondary metabolites that break down to indoles and isothiocyanates - sulforaphane being the best known of the latter. The enzyme responsible for that conversion is myrosinase, which is inactivated by heat, so whether an extract supplies the intact glucosinolate, the converted isothiocyanate, or both is a specification question rather than a detail. Broccoli also contains the carotenoid lutein and provides vitamins K, C and A, folate and fibre, together with phosphorus, potassium, magnesium and vitamins B6 and E.

CHOOSING A GRADE
The specification should follow the intended claim position rather than the other way round, because the marker compounds are not interchangeable:
- Glucoraphanin-standardised grades are the stable precursor form. They are the appropriate choice where the formulation relies on in-situ conversion, and they should declare whether active myrosinase is present.
- Sulforaphane-standardised grades supply the converted isothiocyanate directly. The molecule is reactive and degrades with heat, moisture and storage time, so the specification should state the assay method and the expected loss over shelf life.
- Straight powder and low-ratio extracts suit applications where the whole-vegetable composition, colour or flavour is wanted rather than a marker content.
Purity and particle size are agreed alongside the marker figure, since both affect how the powder disperses in a dry blend or a liquid system.
