Product Description
Smoked plum extract is produced from the smoked and dried fruit known in Chinese materia medica as Fructus Mume (the fruit of Prunus mume Siebold & Zucc.) by aqueous extraction, concentration and drying. The extract is characterised by its organic acid profile, principally malic and citric acid, and by the catechin-class polyphenols carried over from the smoking step. The smoking step is what distinguishes this material from an unsmoked plum extract: it gives the powder its dark colour and its distinctive smoky note.
