PRODUCT DESCRIPTION
Dark plum powder is produced from the dried, smoked fruit of Prunus mume Siebold & Zucc., the fruit known in Chinese as wumei. The fruit is dried and milled to a fine powder that carries the fruit's organic acids and its characteristic smoky-sour aroma.
The composition is dominated by organic acids - principally citric and malic acid - together with sugars, a phenolic fraction and dietary fibre. That acid profile is what the ingredient is normally used for: it contributes tartness and a fermented, savoury note rather than a sweet fruit character, which makes it useful in applications where a simple fruit sweetness would be wrong.

The powder is used as an acidulant and flavour contributor inside a whole-fruit ingredient, and it disperses readily in both dry and liquid systems.
