Shiitake mushroom extract is produced from the cultivated fruiting body of Lentinula edodes and standardised on its polysaccharide content. This article covers the composition, how the extract is standardised, the documentation a B2B buyer should expect, and the formats the ingredient is used in.

Shiitake mushroom

Composition and Source

Shiitake is one of the most widely cultivated culinary and extract mushrooms. The commercial extract is produced from the fruiting body, and the fractions that matter to a specification are the polysaccharides and a small set of characteristic secondary compounds.

  • Polysaccharides and β-glucans – the water-soluble fraction and the usual basis for standardisation; the beta-glucan structures are the group the ingredient is normally bought on.
  • Ergothioneine – a compound characteristic of shiitake and a few other fungi.
  • Melanin and other pigments – carried over from the fruiting body.
  • Vitamins (group B; ergocalciferol where UV-treated) – present in the fresh mushroom and reflected to a degree in the extract.

Because the extract is produced from the cultivated fruiting body, batch-to-batch variation in the polysaccharide content is a normal consideration, and the standardisation and the test method should both be stated in the specification.

Standardisation and Specification

Standard market grades are available, and custom specifications can be produced to order. Exact parameters are confirmed per order and stated in the batch Certificate of Analysis.
