Product Description

Shiitake mushroom extract is produced from the fruiting body of Lentinula edodes (Berk.) Pegler (syn. Lentinus edodes) by a gentle hot-water extraction process, followed by concentration and drying. The material is standardised on its polysaccharide content, which is the parameter on which the ingredient is normally bought and sold.

Composition

• Polysaccharides and β-glucans – the dominant fraction in a hot-water extract, and the usual basis for standardisation.
• Ergosterol (provitamin D₂) – a sterol present in the fungal cell membrane.
• Phenolic compounds and amino acids – minor fractions that contribute to the characteristic flavour of the powder.
• Lentinacin-class nucleotides – a minor fraction reported for this species.
