Apple vinegar powder is a food raw material made from apple through a defined sequence of processes: juicing, sterilisation, fermentation, impurity removal, liquid inclusion and drying. The result is a solid, free-flowing powder that behaves differently from the liquid it is made from - and the difference is worth understanding before you specify it.

Powder compared with liquid vinegar

The two share a very similar nutritional composition, but they are not interchangeable. During the production of the powder, impurity removal, liquid inclusion and drying all take place. As with baking bread, the inclusion and heating stages change the components of the vinegar a little: the organic acids that are strongly irritant and volatile are driven off, while the organic acids, enzymes and minerals with weak volatility are retained. That retained fraction is what forms the solid powder.

The practical consequences are three. The powder is easier to carry and to store than a liquid. It is less irritant, which matters both for handling and for the sensory profile of the finished product. And it can be incorporated into dry systems where a liquid cannot go.

The acid content is the specification item worth pinning down first, because it determines the use level in your formulation.

Where it is used

In Europe and North America, apple vinegar powder is commonly combined with other dry ingredients in food and supplement manufacture. Typical applications include seasoning and snack coatings, marinades, dressings and sauces; beverage and drink-powder systems; dietary supplement capsules, tablets and gummies; and cosmetic formulations that use the astringent character of vinegar. In every case the permitted use level and the labelling position depend on the destination market and remain the responsibility of the brand owner.

Quality Documentation

Manufacturing is carried out under ISO9001, ISO22000, FSSC22000, HACCP, cGMP and FAMI-QS management systems, and the product range is certified for HALAL, KOSHER, NOP and EOS (organic) where applicable. Each batch is released against a batch-specific Certificate of Analysis, and MSDS and specification sheets are available on request to support your internal regulatory review. Certificates are available on request.
