Monk fruit sweetener is produced from the fruit of Siraitia grosvenorii, known in Chinese as luo han guo or "Buddha fruit". The fruit is a small, round gourd grown in southern China, and the extract is one of the principal natural high-intensity sweeteners used in food and beverage manufacturing.

Why the sweetness does not come from sugar
The fruit does contain natural sugars, mainly fructose and glucose, but those are not what makes it sweet. The sweetness comes from a group of cucurbitane-type triterpene glycosides known collectively as mogrosides. Mogroside V, the most abundant of them, is roughly 250 to 300 times sweeter than sucrose by weight. Because the sweetening fraction is not a carbohydrate, monk fruit sweetener is specified by mogroside content rather than by sugar content, and it is used where a high-intensity sweetener is needed without the sugar load.
Handling notes
Mogrosides are heat-stable across normal beverage and bakery processing temperatures and are soluble in water, which makes the powder straightforward to incorporate into dry blends and liquid systems. It does carry a slight aftertaste at high usage levels, and formulations usually pair it with a bulking agent or with a second sweetener. As with any high-intensity sweetener, the labelling and permitted-use position depend on the destination market and remain the responsibility of the brand owner.
Applications
Monk fruit sweetener is used as a natural high-intensity sweetener in powdered and ready-to-drink beverages, in table-top sweetener blends, in dairy and plant-based drinks, in bakery and confectionery, in sauces and seasonings, and in dietary supplement and functional food formulations. It is also used in oral care products, where it does not contribute fermentable carbohydrate.
