Apple cider vinegar powder is produced by the two-stage fermentation of apple juice, followed by concentration and drying to a free-flowing powder. This page sets out the nutritional profile that is normally declared for the material and the specification parameters that accompany it.
Nutritional composition
The table below gives the analysis per 100 g of powder, with the nutrient reference value (NRV) percentage for each figure. These are the values normally used for label declaration.
| Item | Per 100 g | NRV (%) | Item | Per 100 g | NRV (%) |
| Energy | 54 kcal | 2.7 | Dietary fibre | 1.2 g | 4.8 |
| Protein | 0.2 g | 0.3 | Calcium | 4 mg | 0.5 |
| Carbohydrate | 95.6 g | 4.5 | Iron | 0.6 mg | 4 |
| Fat | 0.2 g | 0.3 | Sodium | 1.6 mg | 0.1 |
| Saturated fat | 1.6 g | 8 | Potassium | 119 mg | 6 |
Three points about reading this table. First, the carbohydrate figure reflects the carrier system as well as the vinegar solids, so a grade built on a different carrier will produce a different profile - the analysis follows the specification, not the other way round. Second, NRV percentages are calculated against a stated reference intake; if the destination market uses a different reference set, the percentages have to be recalculated. Third, the values are per 100 g of powder, so per-serving figures require the serving size to be fixed first.

Quality documentation
Manufacturing is carried out under ISO9001, ISO22000, FSSC22000, HACCP, cGMP and FAMI-QS management systems, and the product range is certified for HALAL, KOSHER, NOP and EOS (organic) where applicable. Certificates are available on request. Each batch is released against a Certificate of Analysis, and a nutrient list is issued with the technical pack.
