Apple cider vinegar reaches most formulators in one of two forms: the liquid, or the dried powder. The choice between them is a handling and shelf-life decision rather than a performance one, and the technical parameter that decides most specifications is the total acidity, expressed as acetic acid. This page sets out what the powder is and how it is specified.

Composition
Apple cider vinegar is produced by the two-stage fermentation of apple juice: yeast converts the sugars to alcohol, and acetic acid bacteria then convert the alcohol to acetic acid. The principal acid is acetic acid, accompanied by malic acid from the apple and smaller amounts of other organic acids. The liquid also carries the apple's residual sugars, minerals and the vitamin fraction, including B vitamins and vitamin C, at the low levels typical of a fermented fruit product.
Liquid versus powder
The dried powder is produced by concentrating and drying the liquid onto a carrier. From a manufacturing standpoint the differences that matter are practical:
| Parameter | Liquid | Powder |
| Dosing into dry systems | Requires a liquid addition step | Directly blendable |
| Storage and shipping | Bulk liquid weight; glass or plastic containment | Lower weight and volume; no leakage risk in transit |
| Shelf life | Shorter; acid concentration and flavour drift over time | Longer; free-flowing solid with defined moisture limit |
| Handling | Sharp, volatile odour during dosing | Contained odour; no liquid handling |
| Formulations served | Liquid drinks, dressings, toners | Capsules, tablets, sachets, solid drinks, dry blends |
The powder is completely water-soluble and reconstitutes without precipitation or suspended matter, which is what makes it usable in clear liquid applications as well as dry ones. It carries the characteristic apple and vinegar aroma of the source material.
How the specification is written
Total acidity is the headline figure and should always be quoted as acetic acid, with the method stated. Wellgreen's standard grade is ≥10% total acidity, measured by acid-base titration using a pH indicator, with customised levels from 5% to 10% available. The carrier system, moisture limit and particle size are agreed alongside it, because the carrier is what determines how much active material a given weight of powder actually delivers.
Quality documentation
Manufacturing is carried out under ISO9001, ISO22000, FSSC22000, HACCP, cGMP and FAMI-QS management systems, and the product range is certified for HALAL, KOSHER, NOP and EOS (organic) where applicable. Certificates are available on request. The technical pack includes COA, MSDS, nutrient list, specification sheet, test chart and process flow chart, and Non-GMO verification can be provided.
Applications
- Capsules, tablets and sachets
- Solid drinks, instant beverage bases and drink mixes
- Confectionery, including tablet candy and soft candy
- Food applications where an acidulant and vinegar note are both wanted
- Personal care formulations, including toners and scrubs
